‘Aunty Audrey’s Big Island Eats’ by Audrey Wilson

Big Island people take food very seriously — and they should: the Big Island’s many microclimates make it possible to cultivate a wide variety of crops. There are also thriving ranching and aquaculture industries; myriad small restaurants, bakeries, and farms; and a strong community that loves to cook and eat.

“Aunty Audrey’s Big Island Eats” includes more than 135 easy-to-follow Big Island recipes, supplemented by lots of color photographs.

Audrey Wilson has also collected the stories behind the recipes (many of which have been passed down through generations), which make the dishes even more delicious.

Aunty Audrey includes the favorite foods people bring to potlucks; recipes from beloved restaurants; and recipes that showcase the fresh, local produce, fish, and meat raised on the Big Island.

In addition to writing the weekly column “Let’s Talk Food” in the “Hawaii Tribune Herald,” Wilson is the author of “What the Big Island Likes to Eat,” “A Mother’s Gift to Her Three Sons,” and “An Eruption of Recipes from Volcano.”

She has taken cooking classes all over the world, and has taught cooking at Ke Anuenue Area Health Center, Hilo Adult Education, and several Big Island senior centers.

She lives in Volcano with her husband Jim.

    Just read your article on Umeboshi. Is it still made the old fashioned way with all the healthful bacteria and properties or are the commercial products now full of chemicals and toxins?

    Is there a brand that you recommend?
